Stone Crab: With large brownish-red pincers and black tips similar to the hard-outer shell, stone crab’s meat is white and has a firm, flaky texture. When cooked, it has a succulent and slightly sweet natural flavor. They’re medium to large in size and only claw meat is consumed.



Fun fact: When fishermen catch stone crabs, they usually pry of one claw, and toss the remaining crab back with one claw intact to ensure survival. This is because the claw is known to regrow within 18 months.

Coconut Crab: One of the most rarely consumed crabs, coconut crabs’ taste like a cross between lobsters and crabs. Their meat is white and has an oily texture with sweet notes.

Fun fact: They’re the largest land-dwelling crustaceans according to the Guinness World Record and are known to be ruthless predators. 

Dungeness Crab: Also known as Cancer Magister, this crab is purplish-brown, and turns light red or pink when cooked. The body and claws of a Dungeness crab are both consumed and the meat is tender and moist with salty hints.

Fun fact: Dungeness crabs are predators but they mainly scavenge along the sea bed to hunt for worms, shrimps, and other organisms that live near or under the sand.
