America’s Most Decadent Potato Delicacies

We pound them, roast them, fry them, and grate them, and we take immense pleasure in consuming them.
Yes, we’re talking about potatoes. For time immemorial, potatoes have served as the nation’s ultimate comfort food.

Smoked And Fried Potatoes

This recipe is the result of three different techniques that develop layers of flavor and texture, using the ever-famous Yukon Gold potatoes.
The potatoes are first softened and roasted in a convection oven. Then, they’re smoked with the help of alder wood and dunked into crushed spuds.
Rice bran oil is used to add to their crispiness toward the end. A porcini vinaigrette and black garlic add umami by cutting into the richness—adding a bit of Eastern European influence.

Twice-Baked Potato

In order to prepare this delicacy, russet potatoes are first roasted, after which the flesh is scooped out and mashed into a bowl. The bowl also contains four pounds of sour cream and three pounds of butter for each batch of 25 potatoes.  
Bacon, green onions and pecorino romano are added into the bowl with a few handfuls of salt. The mixture is then put into a cast-iron crock where it is topped with more pecorino, and is left to crisp up and bubble, right before they’re served.

Animal Style Fries

This recipe requires you to fry the potatoes with a mixture of house-rendered pork, beef, poultry fats and double-smoked bacon. The potatoes are used to make a crunchy and rich base for a beefy gravy, two runny fried eggs, cracked black pepper and organic mozzarella cheese curds.
The first step is to find a mature potato. The ideal potato for this recipe needs to be at least 40 days old—the older the potato, the better. If you end up using fresh potatoes, the high levels of sugar will mess up the blanching process.
